Frederik Bille Brahe founder and owner of Café Atelier September and curator of the restaurant at Melsted Seaside Hotel in Bornholm and most recent, the founder of Restaurant Havfruen June 2016 (“Havfruen” Danish for mermaid)
Frederik is an educated chef and have trained at some of the most renowned restaurants in both Copenhagen and London i.e. Kong Hans and Sketch in London, he formerly worked at Saison and Nobu London among others. Frederik is an artist and a creative, both as an individual and as a chef, he has spent most of his younger years travelling, discovering and experienced cultures and meeting creatives alike, which have inspired him greatly. He has an incredible unique sense for art, design and aesthetics in general. His cooking style is simple yet creative, with contrast that creates synergies between taste and textures. His food is always situated around beautiful and seasonal quality produce most often vegetables always somewhat simple, but definitely with a twist or signature that only he would think of, like his Café Atelier September signatures; Yogurt granola with zucchini jam, matcha, basil and mint and the perfect thinly sliced avocado open-faced sandwich on rye bread. He is very aesthetic and his servings are always built and plated with a great atention to detail - like the recent new classic created for Restaurant Havfruen; Bleeding chocolate cake with avocado ice cream and matcha.
Café Atelier September has done a few pop-up restaurants i.e. in Northern Zealand (Copenhagen's Hamptons) where Frederik took over and managed the restaurant 2 summers ago in Tisvilde at "Tisvilde Beach Hotel" as well as "The Recidency" a pop-up restaurant in the well renowned interior design house "The Apartment" in collaboration with Ilse Crawford Design. Internationally he has done pop-up restaurant in Tokyo, Japan at "Arts & Science" in the restaurant "Down the Stairs" and at Dover Street Market and with HAY during Salone del Mobile in Milan where he curated the Café.
In the summer 2015 Frederik began running and curating the kitchen and restaurant at the seaside hotel Melsted at Bornholm, DK which he continues to do so this summer - while simultaneously opening up his new restaurant Havfruen in Nyhavn, Copenhagen opened june 2016 – (closed for now). New project is under development.
Café Atelier September is very much a personal adventure and result of the eager to create and build something of his own, why he created a unique space with all the things he loves from food to coffee, tea, ceramics, wine, interior design, art and overall atmosphere, a space where friends and locals are loyal everyday regulars and casually stop by to say hi and have breakfast lunch or just a coffee. The café has a very personal feel and reflects Frederik as the creative and dedicated chef and creator he is, with a team of creatives; chefs, baristas, sommeliers etc. and the regular audience from the yarning artistic industry e.g. artists, writers, chefs, foodies, designers etc. there’s not a dull day in the café.
Frederiks main characteristic are his attention to detail, his aesthetic eye that resembles the eye of an artist and good craftsmanship. Olive oil is an important requirement for Frederik who believes that the olive oil has that significant layer of mystique and can vary in flavor when drizzled on different ingredients or produce like vegetables, pasta, bread etc.
Frederiks favorite meal is perfectly cooked spaghetti with simple tomato sauce.
